Paired with feta and red onion and tossed in a lemon Dijon vinaigrette, this salad is refreshing way to take advantage of our fresh locally grown produce!

Summer Squash Salad
Ingredients
• 2 Tbsp. extra virgin olive oil
• 1 Tbsp. lemon juice
• 1 tsp. Heinen’s Dijon mustard
• 1/2 tsp. Heinen's honey
• A pinch of salt and pepper
• 2 medium zucchini, shaved into ribbons
• 2 medium yellow squash, shaved into ribbons
• 1/2 red onion, sliced thin
• 1/2 cup Heinen’s crumbled feta cheese
• 1/4 cup fresh basil
• 1/4 cup fresh mint

1. Combine the extra virgin olive oil, lemon juice, Dijon mustard, honey, salt and pepper in a small bowl. Whisk until combined and set aside.
2. Combine the sliced zucchini, yellow squash and red onion in a large bowl. Drizzle the dressing on the salad and gently toss.
3. Top with crumbled feta cheese, fresh basil and fresh mint.

Des tranches de pain généreuses et grillées, de l’avocat et du Salakis (fromage de brebis nature) avec une touche de miel et d’amandes grillées. Je n’ai pas pu résister à ajouter quelques dés de fraise dessus comme c’est de saison, et vous, quelle touche rajouteriez-vous ?
La recette des avocados toasts pour le brunch : 2 tranches de pain de campagne
1 avocat bien mûr
100 g de Salakis
2 cuil à café de miel
2 cuil à soupe d’amandes effilées Quelques fraises
Sel, poivre
Huile d’olive
Herbes de Provence
1. Commencer par faire griller les tranches de pain préalablement badigeonnées avec de l’huile d’olive et herbes de Provence au four pendant 10 minutes à 180°c. Profitez-en pour torréfier vos amandes effilées également.
2. Prélever la chair de l’avocat coupé en deux, taillez des lamelles bien fines et formez une rosace que vous déposez sur le pain
3. Compléter le toast avec le Salakis émietté, un filet de miel, les amandes grillées, un trait d’huile d’olive, fleur de sel et poivre, et pour une touche d’originalité, quelques morceaux de fraises

Crispy Smashed Lemony Potatoes with Greek Yogurt, Feta and Herbs. This one is consistently the top recipe on the blog (you’ll find the recipe there, link in profile). It’s a fun starter, a delicious vegetarian main and great for entertaining. Don’t plan on leftovers. Here I’ve used small Yukon golds, German butterballs are my favorite to smash. Tips: 1- allow the potatoes to “dry” before smashing (return them to the hot and dry pot so the steam can quickly evaporate); 2-when smashing the potatoes, either brush the base of a flat bottomed glass with olive oil or give it a quick spray and wipe off the excess. This way, the potato flesh won’t stick; 3- once smashed, allow the potatoes to come to room temp so more moisture may evaporate before coating with olive oil. This way it will all crisp up nicely; 4- for a creamier topping, simply increase the amount of Greek yogurt. I recommend full fat yogurt here, but you do you.
