The level of delicious this delivers for the simplicity in prep will astound you! (recipe below) Think Cheesecake Meets Ice Box Cake and it’s thanks to the magic that is marshmallow Fluff. Your active time will be about 10 minutes, possibly less. Seriously. Allow it to set overnight in the fridge before serving with more (macerated) berries. That’s it! I think I simply deviate from the classic fruit dip recipe by using whipped cream cheese. I prefer the “lighter” (ahem) consistency. Go with what you like best. If you prefer, assemble these as individual parfaits. If you run to the store now (or even while running errands at the end of the day), you can enjoy this tomorrow to elevate your Monday.
You will need:
8 oz whipped cream cheese (by weight, not measure)
5-6 oz marshmallow Fluff (just less than a small jar)
1 tsp vanilla extract or paste
Tiny pinch kosher salt
20-24 graham cracker squares
2 pints Seasonal Berries, sliced as you like. If you don’t have graham crackers, sub nilla wafers or simply use the creamy filling as a dip for your berries. You also don’t need to be exact with your fluff/cream cheese ratio- adjust it to suit your taste.
•Whip fluff, cream cheese vanilla until creamy and dreamy. Assemble, starting with a graham cracker base and alternate to finish with berries on top. Cover and refrigerate overnight. That’s it!
When my kids were preschoolers, this berry dip was a birthday party and group play date favorite introduced to me an old friend, @biscuitsandnot, and we’ve never looked back. Sometimes the simplest off comforts foods is the only thing that will do! Here’s my favorite hack for Annie’s Mac ‘n Cheese. I started making it this way for my kids when they were tiny so they got their fix while still giving them a nutritious kick from the Greek yogurt and , of course, the broccoli. It’s still in rotation as one of my favorite late night snacks or a quick meal when I’m in a rush.

Lip Smacking Harissa Cauliflower Tacos. Haven’t shared a #tacotuesday post in a quite a while, but these deserve a moment. They come together in a snap and deliver big. Mushrooms get sautéed in olive oil until edges crisp up nicely. Remove them and season, add more olive oil and pan sear some seasoned cauliflower until you see caramelization and toss in some spicy harissa, a dash of maple syrup and lot of fresh ground black pepper (or even better choose @havenskitchen’s delicious Zippy Chili Harissa, which I really love and what I used here). Load some soft, warmed tortillas with the veggies and top with crispy cabbage, creamy avocado and queso fresco (or feta) and you’ve got a vegetarian taco full of texture and flavor-crunchy, chewy, creamy, spicy, umami... Potato Chips deserve a moment! They’re so much more than snack time favorite. Truth be told, I’ve been adding potato chips to sandwiches since I’m old enough to assemble my own (this song was a top 10 hit the very first time I did!), and I see no reason to stop. By adding crunchy, salty delight to this simple avocado toast (where they team up with sliced 9 minute egg, crispy seaweed snack, sesame seeds and red chili flakes) your deliciously elevating this classic. A nice squirt if kewpie mayo brings it all together. It all sits atop toasted dense buckwheat bread which adds more texture with its crispy crust and chewy bite. All I’m craving now are salads. Bright, crispy and so so satisfying. Chicory Salad with Egg, Cucumber, Roasted Beets, White Anchovy (Boquerones), and Rye Bread Crumbs. It gets tossed with a lemony Dijon vinaigrette. Fennel and/or celery is also delicious with this combo. For a vegan option, sub the anchovy for capers and/or olive. I’m craving all salads right now and this one is packed with flavor and texture! It’s a little bitter (in that great way), sweet, bright, briny, crispy, crunchy and creamy. To achieve great yolks, always use a timer and finish with an ice bath. I made the breads crumbs from two day old rye bread which I toasted before processing. Deeply Chocolatey Brownies (recipe on the blog, link in profile). These are for serious chocolate lovers! They contain good quality melted dark and bittersweet chocolates, cocoa powder and chocolate chunks (@valrhona is my go-to). The edges are simultaneously crispy and chewy and the center is dense and fudgy. Remember, quality dark chocolate is a powerful superfood- great source of antioxidants, it helps protect your cells from inflammation, improves brain function and boosts immune and cardiovascular health, and as a bonus will lift your mood (just in case you need a nudge🙃). The recipe makes a nice big tray because, after all, sharing is caring. I missed getting these up yesterday for 4/20, but everyday should be brownie day. Cauliflower Sloppy Joe’s in 40 seconds! A guaranteed crowd pleasing #meatlessmonday option. Adapted from my Cauliflower Bolognese (recipes on the blog, link in profile, search cauliflower), this vegetarian main always puts a smile on my face as it transports me back to one of my favorite grade school cafeteria lunches. It hit the calendar once a month, and the line was guaranteed to run out the door and up the stairs (anyone remember?). I believe I’ve captured that delightfully tangy and sweet flavor from childhood while bringing it plant forward. I like to serve this on a fresh baguette (I love the crust), but do default to the traditional hamburger bun when I have them on hand. The bread soaks up the sauce, meaning your very last bite will rival the first. If you’re looking to make this vegan, simply swap the butter for your plant-based favorite. I recommend starting with the bolognese and splitting the batch with the simple Sloppy Joe adjustments so you have two delicious meals with one effort. Broccoli Rabe Quesadilla. So simple. So good.
•Don’t spin the broccoli rabe dry as you want some water to allow it to steam and sauté simultaneously for tender results. •I love using a generous amount of lemon and zest to counter its natural bitterness. •Calabrian chili flakes give it that extra special punch and nothing is complete without several turns of fresh ground black pepper. •Please feel free to use fresh garlic (sadly, my stomach doesn’t like it). Here I use a touch of Purple Stripe Garlic from Burlap and Barrel that does the trick. •I pack this full so one bunch fills two quesadillas. •The cheese, a gooey when melted goat Gouda, keeps it all in place. •Make sure to heat the tortilla on both sides to give it structure so it crisps up nicely before filling, and helps keeps it from being soggy.
Ingredients:
2 Tbs olive oil
1 bunch (organic) broccoli rabe
Calabrian chili flakes to taste
Garlic of choice
Fresh ground pepper
Kosher (sea) salt
Juice of half lemon
Zest of one lemon, about 1 tsp
2 flour tortillas
4 oz goat Gouda (or cheese of choice)

Jury Duty is happening and dreaming of my Sesame bagel, toasted (yes), with a generous smear of local cream cheese, trout roe, cucumber, dill and fresh ground pepper. I do always put sliced cucumber on my bagels. It makes them feel less heavy. Scrolling through my feed is making me hungry and all I can think about is what I’ll eat for lunch.
