Well folks, it's that time of year again. Raise your hand if you're stressing about back to school ✋ Don't worry, we're here with this 15-minute, Bento Box ready recipe so you have one less thing to worry about. Full recipe below 👇
Ingredients:
1 8oz pouch Daring Original Pieces
¼ cup vegan mayo
¼ cup dijon mustard
2 tsp maple syrup
⅛ tsp kosher salt
2 burrito tortillas
1 cup baby spinach
¼ cup shredded carrot
1 red bell pepper, sliced
Method:
1. Preheat oven to 400. Then, prep the honey mustard sauce by whisking together the vegan mayo, mustard, maple syrup & salt in a small bowl.
2. Line a sheet pan with parchment paper & arrange the Daring Original Pieces in one even layer. Using a pastry brush, evenly coat both sides of the pieces with half the honey mustard sauce.
3. Bake the honey mustard-coated Daring Pieces for 10-12 minutes, or until just beginning to turn golden brown, making sure to flip halfway to ensure even cooking. Remove from the oven & allow to cool for 10 minutes before assembling the pinwheels.
4. Microwave one tortilla for 10-15 seconds, or until gently warmed & completely pliable.
5. To assemble the Daring pinwheels, lay one warmed tortilla on a flat surface. Evenly cover the tortilla with half the baby spinach, then lay half the cooled Daring Pieces in a straight line on the side of the tortilla closest to you.
6. Next to the Daring Pieces, arrange the shredded carrots & red bell pepper. Top the Daring, carrots & pepper with a generous drizzle of the honey mustard sauce, then roll tightly into a compact log. Repeat steps 5-7 to roll the second pinwheel.
7. Remove the ends from either side of the roll with a knife. Gently slice the roll into even pieces about 1 inch thick.
8. Arrange the sliced Daring pinwheels in a lunchbox or container; they’ll be delicious at lunch time whether they’re room temperature or refrigerated.
P.S. To save leftovers for additional lunches, wrap the unused roll (not cut!) in plastic wrap & refrigerate for up to 3 days. When you’re ready to eat or pack a lunch, remove the roll from the plastic wrap & cut the pinwheels.

Ingredients:
1 Pack Daring Lemon & Herb Pieces
2 zucchinis, one yellow one green
Multi-colored cherry tomatoes
Mini bell peppers
Fresh basil
Balsamic glaze
Extra virgin olive oil
Salt, pepper
Toothpicks for serving (we love frilly ones)
Method:
1. Preheat oven to 350 degrees.
2. Line a baking sheet with parchment paper.
3. Chop the mini bell peppers into large chunks. Remove seeds.
4. Slice the zucchini into half moons.
5. Place the chopped veggies and frozen Daring pieces on the baking sheet, keeping them in their own sections as much as possible.
6. Drizzle everything with olive oil, and your preference of black pepper.
7. Bake on 350 degrees for 10-15 minutes, until the veggies have softened down and the Daring pieces are golden brown. Flip the Daring pieces halfway through, and check to see that their bottom sides have developed browning.
8. While the pan is in the oven, slice the cherry tomatoes in half and give the basil a rough chop.
9. When baking is done, remove the sheet pan from the oven and drizzle the zucchini with a generous amount of the balsamic glaze.
10. Start skewering your items on each toothpick, keeping the order the same for each. We like to start with the basil on top, then a piece of Daring, then a zucchini slice, then a bell pepper, and lastly a half of a cherry tomato with the flat side down, so it acts as a little stand keeping each toothpick upright. Enjoy!

Ingredients:
2 tbsp @trybachans Original Japanese BBQ Sauce
1/2 tsp minced fresh ginger
2 garlic cloves minced
1 tbsp soy sauce
1/2 tsp of garlic chili paste
Directions: Bring the sauce to a bubbling simmer then toss in the cooked pieces to make them nice and sticky
We love a classic, and this Cobb Salad is no exception. We took everything you love about a Cobb and swapped it with it's plant-made counterpart for a lunch worthy of saying bon appétit (minus the meat) 🤌 Full recipe below.
Ingredients:
1 Tray Daring Plant Chicken Tenders
1 pack vegan bacon
1 avocado
1-2 heads of Romaine lettuce, chopped
2 handfuls cherry tomatoes, sliced in half
¼ red onion, thin sliced
Gorgonzola cheese, crumbled
Bleu cheese dressing
Method:
1. In 2 separate pans, start cooking the vegan bacon and Daring Plant Chicken Tenders. For the Tenders, heat a frying pan on medium-high heat. Drizzle with a little cooking oil and sear the Daring Original Plant Chicken Pieces for 2-4 minutes per side. They are done when they have a nice golden brown color to them.
2. Meanwhile, finely slice the onions, slice cherry tomatoes in half, chop lettuce, and slice avocado.
3. When the bacon is finished cooking, roughly chop it or tear it up it by hand.
4. When the Daring Plant Chicken Tenders are finished, move to a cutting board and slice it up on an angle so you have little strips.
5. Place the lettuce in 2 bowls, and toss with the Bleu cheese dressing.
6. Arrange the toppings in little sections on top of the lettuce. We like to put the Daring in a row down the middle, and place everything else around it.
7. Enjoy!

Zesty, light, refreshing & satisfying. No, we're not describing our incredible personality, we're describing these Zesty Daring & Orzo Lettuce Cups, a.k.a. the perfect lunch to get you through these last hot summer days. Full recipe below 👇
Ingredients:
1/2 Pouch Daring Original Plant Chicken Pieces
1 Romaine lettuce heart
4oz Orzo pasta
½ Fresh lemon
1 Garlic clove minced
1 tbsp Creme fraiche
Pinch of salt
Pinch of pepper
Olive oil 1 tbsp
½ Zucchini grated
½ Red onion finely chopped
2-3 Sprigs of mint - leaves removed and finely chopped
Small handful of fresh flat leaf parsley finely chopped
Small handful of pistachios
Method:
1. Cook the orzo pasta as directed on the packet. Once cooked, drain, and set aside.
2. Meanwhile, heat a frying pan on medium-high heat. Drizzle with a little cooking oil and sear the Daring Original Plant Chicken Pieces for 2-4 minutes per side. Once cooked, place the pieces on a chopping board and finely shred with two forks.
3. Finely chop the red onion, parsley, mint and grate the zucchini.
4. Prepare the dressing by mixing the juice of half a lemon, crème fraîche, minced fresh garlic, salt and pepper.
5. Place the orzo pasta, finely chopped veg and shredded daring into a large mixing bowl and pour over the dressing.
6. Wash and dry the romaine lettuce leaves and individually fill each one with roughly 1 heaped tbsp of the Daring orzo.
7. Wrap up and enjoy!
8. If there is any leftover mix it makes a great Tupperware lunch the next day. Store in the refrigerator overnight.
