Monsoon season definitely calls for tea/chai! So few posts probably gonna revolve around tea now..
This is a Spinach cottage cheese bread roll (palakh-paneer bread roll'- yes you read that right 😉 ).
I felt this goes really well with tea..like tea and snacks combo! But ofcourse you can have it any time 😀
Recipe from Chef Nehal:
Make the dough using-
2 1/4 cup flour
Add 10gm instant yeast to 4tbspn water +1 1/2 tbspn sugar
1 cup water
3 tbspn olive oil/white oil
Kneed really well and allow it to proof for 2 hours (I kept it overnight in the fridge)
For the stuffing-
Mix 1 cup sautéed Spinach with 250gm cottage cheese or paneer. Add mix herbs, garlic, red chilli flakes, salt and pepper. Add 2 tbspn butter and blend them together.
Egg wash-
1 cup milk, 2tbspn melted butter, 1/4 cup milk, grated garlic and chopped coriander leaves.
Roll the dough into a rectangle shape. Apply the Spinach cheese mix, roll the dough (last pic) and cut it into 1/2 first. From each of the halves, cut each wheel out. (I need practice too 😞) let the wheels proof for another 15-30min. Add egg wash and bake at 180° for 15-20min. If you are baking in OTG they should come out with brownish crust. Take them out and brush with some melted butter ✌️ 👩🍳
