The little one is going on a school picnic after 2 years and asked for a cool , fun dabba.So I stuck to the brief and came up with these sandwiches.
What when in those
1) Caramelised Onions : Add some butter to a pan, and add your onions with a pinch of sugar.Saute until they turn golden brown
2) Chilly Sausages : In the same pan , yes the same one,so the sausages can take up that amazing Caramelised flavour.Add some butter and then thrown in your sausages.Once they turn brown, add a dash of soy , 2 tsps of Schezwan sauce and one 1 tsp of of tomato ketchup and a pinch of sugar.Saute till the sausages are well coated with those sauces
3) Romaine Lettuce : For the green balance because #Maahoonna
4) Cheese Slices : To balance all those saucy chilly flavours
5) Good Quality Bread
Build your sandwiches
Lettuce first
Cheese slices next
Caramelised Onions
Sausages cut in two halves , length wise
And done!

Today's dabba is reminiscent of my visits to the very traditional Anand Bhavan & Ram Ashray Udupi restaurants in the predominantly south Indian community of Matunga in Bombay.During the 11 day Ganesh Chaturthi festival, my father used to take us pandal hopping all across the city and on our return we ate at either of these places and I really really used to look forward to the dessert of pineapple kesari at the end of the meal -- Decadent and just so heavenly, very very different from the sheeras and the halwas.Today I tried to recreate that memory.Here's the recipe while i eagerly await the verdict.
PINEAPPLE KESARI
In a kadhai add around 5-6 tablespoons of Desi ghee.
Once the ghee is hot, add 1 katori of sooji
Saute until the sooji becomes aromatic -- remember this is not halwa and we must retain the beige colour of the sooji
To this add 1 katori of fresh pineapple cubes
Saute until the pineapple become softer
Now to this add 1 katori of sugar
Saute until the sugar melts
Then add 5 katoris of boiling water
Saute
Then add your kesari -- so kesari is essential saffron that I soaked in hot water last night, and that's how it lent that beautiful colour
I do not use artificial food colouring ever
Add the kesari to the sooji mix
Add 3-4 tablespoons of Desi ghee and give it a good mix
Cover for around 5-10 minutes
Garnish with slivers of pistachios ,almonds and few strands of saffron.
Serve hot with puris or have it just like that!
Yum!

So we're back to regular programming.Yeah.Holiday over and we are back to the morning circus.I kinda missed this chaos though.hahaha #momlife.So i never like never do the hoity toity pine nuts version.They're insanely expensive.I do the sasta version with walnuts , yeah. Healthy and nutty nonetheless.Anyway so the tricks to the perfect lush green pesto pasta are
1) Blanch the basil leaves in boiling water for like 5 seconds and then immediately put them in an ice bath -- A bowl of cold water and lots of ice.You will see the colours turn deep deep green
2) Always cook your pasta with your veggies and your cheese first.And then TOSS the pesto in without the flame on.Yeah only TOSS it in, the moment you cook it it will start turning darker and get that weird colour.
RECIPE
For the Pesto
So take the iced basil leaves, I used around 100 Grams.
6 walnuts
4 garlic cloves
Juice of 1 lemon
Extra virgin olive oil
Blend together.
For the Pasta
Heat some evoo in a pan
Add 2 cloves of crushed garlic
Add some red chilli flakes and pepper
Add the mushrooms and cherry tomatoes
Saute
Add the boiled penne along with some of that pasta water
Add loads of grated cheese.I used good old Amul cheese
Saute well
Add your bell peppers in
Mix
The cheese will begin to melt
Shut the flame
Toss the pesto in
Just toss
And that's it!

So it's been close to 15, no wait 19 years (15 of being married and 19 of knowing each other) that @ketanp has been ranting that I don't take his pictures and he takes mine all the time.Yeah I mean other than the ones where my double chin is showing or my mouth is open or my tummy is showing or my hair is not done -- yeah other than those he has taken a few, few good ones!But he won't agree. A hot freshly steamed modak ,stuffed with locally grown coconut , jaggery and just a hint of cardamom, served with some warm sajuk (Desi) toop (ghee).Ganpati Bappa Morya! But wait it's not even Chaturthi yet, yeah , Modak is also relished as dessert across the Konkan belt -- What fun! Yum!
