onigirazu is basically like an onigiri but sandwich form, and she’s amazing plus super easy to make too! feel free to jazz up the fillings with whatever you have, from tuna, to pan fried tofu to pork katsu to just veggies 🤌🏽
ingredients/
sushi rice
spam - sauce: 1/2 tbsp light soy, 1/2 tbsp sugar, 1/2 tsp oyster
2 eggs - mixed with pinch of black pepper & pinch of salt
kimchi - fried with 1/2 tsp sugar
nori sheet
furikake (optional)
lettuce
sriracha + kewpie mayo

Kimchi Fried Rice – If you’ve never had this before, just know that its insanely delicious. IFYKYK
Ingredients
400 g day old Rice
50 g Onions
200 g Kimchi
1 tsp Kosher salt
50 g Kimchi Brine
2 Tbsp Gochujang
¼ Cup Water
1 Tbsp Sesame Oil
For Garnish:
2 Eggs
Dried Seaweed
Chives
Chili flakes
Instructions:
1. Rough chop the kimchi and set aside.
2. Dice the onions and sauté in medium heat for 2 minutes or until lightly brown. Next is to toss in the kimchi and sauté for 1 more minute.
3. At this point, add in the day-old rice. Stir fry for 1-2 minutes.
4. Add in the kimchi juice. Mix well and stir fry again for 1 minute.
5. Add in the water and gochujang. Stir fry for 2 more minutes.
6. Finally, turn off the heat and add in the sesame oil.
7. Finish the dish with 2 fried eggs, chopped seaweed, chives and chili flakes. Enjoy!

Healthier Kimchi Fried Rice
I say “healthier” because I cut the amount of carbs in half by using Riced Cauliflower. It truly felt and tasted like I was eating normal Kimchi Fried Rice. Hopefully this helps you with your journey of losing weight. Then again, this page really isn’t diet friendly. Maybe in the future? Nah… well- Maybe?
Ingredients
200 g Day Old Rice
200 g Riced Cauliflower
150 g Kimchi
50 g Kimchi Juice
50 g Onions
1 Tbsp Sesame Oil
1 tsp Salt
2 Tbsp Gochujang
1/8 cup water
2 eggs
Nori
Spring Onions
Instructions:
1. Dice the onions and sauté until fragrant.
2. Rough chop the kimchi. Save the kimchi juice. Sauté the kimchi with the diced onions for 2-3 mins.
3. Add the rice into the pan and mix with the kimchi and onions. Constantly stir the rice and the veggies so that the flavors incorporate. Toss in the Riced Cauliflower and repeat the process.
4. Mix the gochujang and the water until it forms a smooth thick sauce. Add into the rice mixture and stir making sure every rice is coated by the sauce. Season with 1 tsp Kosher Salt.
5. Pour in the kimchi juice and sesame oil. Stir fry for 1 more minute.
6. Garnish the kimchi rice with 2 sunny side up eggs, thinly sliced dried seaweed (Nori), and thinly sliced Spring onions. Enjoy!

One of my favorite recipes from the Momofuku Cookbook.
Momofuku Kimchi
Ingredients
1 Med Size Napa Cabbage
2 Tbsp Kosher Salt
2 Tbsp Sugar
100 g or 1 Cup Spring Onions
1 Cup Julienned Carrots
Paste
100 g Garlic
20 g Ginger
1/2 Cup Kochukaru
(Korean Chile Powder)
1/4 Cup Soy Sauce
1/2 Cup Sugar
1/4 Cup Fish Sauce
2 Tsp Salted Shrimp
1/3 Cup Water
Instructions:
1. Wash and rinse the cabbage, cut the cabbage in half lengthwise. Toss in 2 Tbsp Kosher salt and 2 Tbsp Sugar. Refrigerate Overnight. This brings out the excess water from the napa.
2. In a food processor, blend all the ingredients listed above.
3. Cut the spring onions in 1-inch pieces. Julienne the Carrots.
4. Drain the napa cabbage and squeeze it dry.
5. In a bowl, toss in the spring onions and carrots with half the amount of paste. Mix well. Then add the cabbage and remaining paste.
6. Cover and refrigerate. It should be good for a month in the fridge.
