I was watching A Nation of Broth on netflix a while back, and that beginning scene of them eating octopus seafood ramyun in Jeju had me drooooling😩. So here’s me tryna attempt that, would defo be nicer with a more tentacles and some crab, but this still tasted 😮💨
to lvl it up more, would taste even better with a seafood base broth made from simmering items like kelp, bonito flakes, onion, dried shrimp, dried anchovies, garlic. But if you’re lazy like me then this still works amazingly.
ingredients:
1/4 onion, sliced
1 spring onion, separate greens & white
1/2 tsp garlic
kimchi
1 octopus tentacle @wrightbrosltd

3 mussles

500ml water

jhol momo 🥟
LOOK WHO HAVE JUST COLLABED!🤪 @myriadrecipes and I are here to bring you some delicious dumpling goodness aka Jhol Momo, steamed dumplings from Nepal with a delicious spiced filling and spicy creamy chutney.
Ingredients:
2 chicken thighs/1 chicken breast- 150g, minced
1/2 cup chinese cabbage, chopped
2 spring onions, finely chopped
½ red onion, finely chopped
½ cup coriander, chopped
1 tsp garam masala
1 tsp cumin powder
2 tsp vegetable oil
1 tsp ginger garlic paste
½ tsp salt
homemade/premade dumpling wrappers
1. in a bowl, add chopped cabbage and 1 tsp of salt, leave for 10-15 minutes to draw out water.
2. in a big bowl, add filling ingredients then pour hot oil over spices and mix

2 tbsp sesame seeds, toasted
1 tbsp peanuts, toasted
½ tsp sichuan peppercorns, toasted
2 tbsp neutral oil
2 tomatoes, diced
1-2 chillies
1/2 tsp cumin seeds
2 tsp ginger garlic paste)
½ cup chopped coriander, handful
1/4 tsp turmeric
1/2 tsp chilli powder
½ tsp salt
1 tsp sugar
1.5 - 2 cups chicken broth
1/2 lemon
garnishes:
coriander
sesame seeds
chilli
chilli oil
1. add toasted ingredients into a blender and blitz until powdered
3. in a pan over med heat, heat oil then add cumin seeds, fry until fragrant
4. add chopped tomatoes and chillies, fry until soften
5. add turmeric and chilli powder then mix and pour mixture into same blender, along with chicken broth, coriander, salt, sugar and lemon juice. taste and adjust to liking. (you can add less chicken broth for a less soupy base)
preparation:
1. grab a wrapper and add a tsp amount of filling into the centre
2. if using defrosted wrapped, lightly wet the rim of the wrapper
3. bring together the top of the wrapper and start to pleat as you go around the dumpling, keeping your thumb in the middle so it looks like a small pouch with a hole in the middle.
4. add momo into a steamer basket and boil for 10 minutes.
5. in a plate, pour jhol, followed by steamed momo, coriander, sliced chillies, sesame seeds and chilli oil

claypot chicken rice
clay pot rice or 煲仔饭 (bo zai fan) is literally pure comfort in a dish, she’s comforting, delicious and so easy to make, super easy 1 pot dish, what more do you need! plus it makes me feel like i’m back home each time i eat it 🥹
also that crispy bottom got tooo crispy while i was filming 🤪 still good tho
for those without claypot, you can definitely use a dutch oven, stainless or non stick pot for this! Even rice cooker too 👀 tho i haven’t tried that
ingredients:
5 pieces chicken wings
1/2 inch ginger, minced
3 garlic, minced
2 spring onion, minced keep white and green separate
130g jasmine rice
130-135ml water
1 Chinese sausage (lap cheong), add hot water, to remove skin then chop.
1 egg
coriander
marinade:
1/2 tsp soy
1 tsp shaoxing
1 tsp oyster sauce
1/2 tsp dark soy
1 tsp sugar
1/4 tsp white pepper
sauce:
1 tbsp oyster
1.5 tsp soy
1 tsp sugar
1 tbsp water
1 tsp scallion oil or sesame (i added 1 tsp scallion plus a drop of sesame)
1 tsp dark soy
1. marinate chicken for at least 15 minutes
2. rinse rice 2-3 times then soak in water for 30 minutes
3. in a clay pot over med heat, add some oil and sear sides of chicken to get some colour, each side around 1-2 minutes (or just add marinated chicken directly over rice with sausage)
4. remove chicken, add more oil if needed and add garlic, then ginger and whites of spring onion, fry until fragrant
5. add drained soaked rice and stir fry until aromatics mixed with rice
6. pour in equal parts water and bring to boil
7. cover and cook on low for 10 minutes
8. open cover and add chicken and sausage, cover and cook for around 10-15 minutes or until chicken cooked (time will vary depending if using boneless chicken)
9. add oil around edges of claypot, and cook on med for 2-3 minutes
10. turn off heat, add chopped greens of spring onions, crack an egg and pour sauce over rice. Cover and let heat cook egg, around 3 minutes
11. garnish with coriander, mix and enjoy.

claypot tofu with prawns & pork
this is a chinese dish called 瓦煲豆腐 which means claypot tofu plus with some added protein cause why not 😮💨 but you can definitely just add in more veggies like broccoli, chinese cabbage and mushrooms if you prefer!
ingredients:
300g med firm tofu, cut into blocks
1 carrot, chopped
50g green peas, cut in half (or leave while like I did but i recommend cutting)
2 garlic cloves, minced
1/2 onion, cut into chunks
3 slices of ginger
1 sausage, remove the outer casing or around 30g mince (any protein)
8-10 prawns, clean and deveined, marinated in some salt and pepper
cornstarch
1/4 cup neutral oil (can use less oil if you prefer)
sauce:
1 tbsp oyster sauce
1 tbsp shaoxing
1/2 tsp sugar
1 tsp dark soy sauce
1/2 tsp chicken powder/bouillon
pinch white pepper
140ml water
method:
1. pat fry your tofu and cut into blocks. cover slightly in corn starch powder
2. in a pot with neutral oil, heat over med-high heat, use chopstick to see if oil if hot enough, if bubbles form around end of chopstick, oil is ready
3. place tofu blocks into pot and fry each side until golden brown
4. in a claypot, gently heat with oil
5. turn heat up to med and add garlic and ginger
6. once fragrant, add sausage, making sure to break it up into pieces.
7. once mince cooked and slightly brown add prawns and stir fry for 1 min
8. Add in carrots and fry for around 1 before adding in the green beans
9. Stir fry everything for another minute before pouring in the water
10. Add in all the ingredients for the sauce and give it a good mix, bringing the sauce up to a boil.
11. Then add in the tofu, making sure not to break while you mix. Cook for another 2 minutes or until it starts to warm
12. Once sauce is boiling, pour in the corn starch slurry, making sure to mix gently so it distributes evenly
13. Turn off heat, cover and serve alongside hot rice.

10 minute cold sesame noodles 🍜
this dish is based on the taiwanese classic, ma jiang mian or 麻醬麵, its a super easy dish that can be whipped up for a quick lunch, cause who wants to be cooking for hours during this heat 😩 feel free to skip rinsing the noodles if you want a hot version.
also tried to style it fancy like @lucas.sin 😌
ingredients:
170g wheat noodles
2 tbsp chinese sesame paste (can replace with tahini but flavour will differ)
1 tbsp sesame oil
1 tbsp soy sauce
2 tsp brown sugar
1/2 tbsp peanut butter
1/2 tbsp chinese black vinegar
1/2 tsp garlic paste
pinch salt
1/2 tsp chicken powder (optional)
1/4 cup of noodle water
1 tsp chilli oil (optional, can add some into the sauce or just at the end)
toppings:
1 boiled egg
cucumber, sliced
crushed peanuts
sesame seeds
1 scallions, finely sliced
chilli oil
method:
- cook noodles according to packet instructions, reserving 1/4 cup of noodle water for sauce
- once cooked, rinse noodles under cold water, drizzle some sesame oil and mix to prevent sticking (optional)
- in a bowl, add all sauce ingredients, and gradually add water, mixing till you get your preferred consistency, taste and adjust to liking
- in a bowl, pour in couple spoonfuls of sauce and mix (or just add all)
- once mixed, pour in remaining sauce, top with sliced cucumber, spring onions, boiled egg, crushed peanuts, sesame seeds

creamy spicy boozy pasta 🔥
she’s basically a penne alla vodka or that gigi hadid pasta but with a gochujang twist cause that makes anything taste bomb 😩
feel free to add your protein of choice alongside this, i love adding some prawns
ingredients:
1 tbsp olive oil
1/2 onions, diced
5 garlic, sliced
2 tbsp gochujang
1 tbsp tomato purée
1 tbsp vodka
1/2 cup + 1-2 tbsp double cream
1/4-1/2 cup of pasta water (add and adjust to taste)
1/4 cup grated parmesan
220g pasta
knob of butter
method:
1. cook pasta to al dente in salted water.
2. in a pan over med heat, add olive oil, garlic and fry until slightly fragrant, then add onions, fry until softened.
3. add gochujang and tomato purée, mix to combine and pan fry for 2-3 minutes before adding vodka.
4. cook out vodka before adding cream, reducing heat to simmer the cream.
5. mix the paste into the cream until combined before adding cooked pasta, pasta water and parmesan.
6. add a knob of butter, crack some black pepper and pinch of salt if needed.
7. top off with more parmesan and enjoy~

AD| Miso Marinated Salmon with Nyumen using @panasonickitchen DS59N 4-in-1 Combi Oven
This dish literally the best thing to whip up during this heat cause it takes less than 25 mins to whip it up with minimal prep (you could even marinate the salmon in the morning and pop it in the oven just before lunch 😍) It was made simpler with Panasonics Combi Oven, allowing me to make the dish with one appliance!
Also I think miso marinated anything is now my new favourite thing, so GOOD 🫶🏽
Ingredients:
2 Salmon fillets
2 tbsp White Miso
1/2 tbsp Light Soy
1 tbsp Sugar
1 tbsp Mirin
1 tbsp Sake
1/2 tsp Ginger
Broth:
250ml water
1/2 tsp dashi powder
1/2 tsp sugar
1/2 tbsp light soy
1/2 tbsp mirin
70g of Somen Noodles, or enough serving for 1
Toppings:
Chopped Spring Onions
Chopped Seaweed
Sesame seeds
1. In a bowl, add marinade ingredients and mix.
2. Add marinade to salmon, throughly covering the pieces, leave to marinate for at least 30 minutes or up to couple hours
3. Arrange salmon pieces on baking tray lined with parchment paper, removing excess marinade so not to burn.
4. Using Combi 6 function (Steam and Oven), at 200°C, place the salmon in the middle rack and cook salmon fillets for 10-12 minutes.
5. Switch function to Grill 1, move tray to the top and cook for another 2-3 minutes or until top is brown.
6. In a microwave safe bowl, add broth ingredients.
7. Using microwave function, cook on high for 1 minute or until hot.
8. In a microwave safe bowl, add somen noodles and some boiling water to soften noodles.
9. Using microwave function, cook on med for 1 minute, making sure to undercook slightly as it will continue to cook in broth.
10. Once cooked, drain into sieve and wash under cold water.
11. Place washed somen noodles into a bowl followed by hot broth, add salmon fillet, sliced spring onion, seaweed, sesame seeds and left over miso sauce (optional).
optional: In a saucepan over medium heat, add left over marinade from salmon, diluting with 1 tbsp of water, cook until slightly thick.

I miss making my own dumplings, especially love when you find a whole batch in the freezer that you forgot making, it’s the simple things in life😌
Ingredients:
Filling makes 25-30 dumplings (there’s more filling than wrappers)
4 dried shiitake mushrooms rehydrated in 1/2 cup water
250g minced pork
250g cup cabbage
3 spring onions, minced
1 tbsp soy sauce
1 tbsp oyster sauce
1/4 cup coriander, chopped
1 tsp ginger, grated
1 tsp garlic, grated
2 tsp sesame oil
1/4 tsp salt
Wrappers:
(It’s a 2:1 ratio)
200g flour
pinch salt
100g water
1. In a bowl, add hot water to dried mushrooms to dehydrate. Squeeze out water from mushrooms before slicing.
2. Mix flour and salt then pour in water gradually as you mix to form dough
3. Res 15 minutes covered
4. Knead again until smooth then rest 30 minutes or until dough is soft.
5. Mince cabbage into small pieces, salt and leave for 10-15 minutes
6. Squeeze and drain water from cabbage
7. In a bowl, add filling ingredients and 2 tbsp of mushroom broth
8. Mix until sticky well combined
9. Roll out dough into log and cut 12-15 sections.
10. Flatten pieces into disc and roll out into circle discs.
11. Add spoonful of filling to wrapper and fold
12. Dust flour on dumplings to prevent sticking.
13. In a pan of oil on med-high heat, add dumplings and fry until bottoms start to look golden.
14. Add water and cover, cook for 7 mins or until water evaporates.
15. Uncover and cook additional 2 mins or until bottoms are crispy

prawn gochujang pasta with a lil 🍷🤪

inspired by marion’s shrimp scampi cause it’s bomb and reminds me of this dish i used to have when I was younger 😩🤌🏽, so let’s add some pasta cause why not
plus using @ourplace (gifted) always pan for this dish, she’s my new love 😩🤌🏽
ingredients:
300g prawns
200g pasta, linguine
1.5 tbsp gochujang
1 tsp gochugaru
1 knob of butter
1 tbsp olive oil
5 garlic cloves, minced
110ml white wine
bunch coriander, chopped
juice of 1/2 lemon (can be less)
reserved pasta water(around 1/4 cup)
1. devein and clean shrimp, either remove head and shell, keeping tail, or remove just middle. Or use prawns without shell
2. In a pan over medium heat, add butter and oil.
3. Pan fry garlic until soft then add gochujang, cook it out until oil becomes red and is combined with garlic
4. Pour in white wine, add gochugaru and cook for 2-3 minutes or until thickened
5. Add prawns and simmer until cooked
6. Add squeeze of lemon, chopped coriander, mix then add cooked pasta.
7. Mix pasta thoroughly then top with more coriander

chicken “katsu”don
Katsu in quotations marks cause frozen fried chicken from aldi 🤪; it saves me from deep frying and still tastes bomb so win win.
katsudon is a Japanese dish consisting of deep fried panko coated pork simmering in a savoury sauce and beaten egg. But one hack I love is to use whatever leftover fried meats I have eg KFC chicken tender 😮💨. I didn’t have any this time so let’s use some left over frozen fried chicken pieces.
Also if any of y’all come for me saying the crispy chicken gets soggy etc, just try it please! The crispy outer layer soaking up that sauce is actually what makes this dish 10/10
Ingredients:
1 Chicken Katsu (or KFC chicken tenders, fried chicken etc)
1/3 cup water
1/2 tsp dashi powder
1/4 onion, sliced
1 tbsp light soy sauce
1 tsp sugar
1 tbsp mirin
1/2 tbsp sake
1/2 onion
1 egg
1. In a bowl, slightly beat an egg
2. In a pan, add onions and all ingredients for sauce (except chicken and eggs) and bring to a boil then simmer.
3. Add cooked fried chicken, spoon over some sauce over chicken. Allow to simmer for 1-2 minutes until chicken is heated
4. Evenly pour beaten egg over chicken, then cover for 1 minute or until egg slightly sets.
5. Gently slide over a bowl of hot rice.
6. Sprinkle sliced spring onions and shichimi togarashi over chicken

claypot soy sauce chicken wings with noodles 🍜
soy sauce chicken is life, noodles are love therefore soy sauce chicken noodles is love of my life 😌 it’s just pure comfort in a bowl, and just so addictive. You can definitely swap out the noodles and have the chicken over rice.
Ingredients:
4 chicken wings, cut slits on skin
1 tsp soy sauce
1 tsp dark soy
pinch salt
pinch white pepper
1/2 inch ginger, cut into matchsticks
3 ginger sliced
4 garlic pieces, crushed
1 tsp shaoxing wine
2 tsp light soy
2 tsp oyster sauce
2 tsp dark soy
1/2 tsp sesame oil
pinch of salt
1 tsp sugar
2 spring onion, cut into chunks
corn starch slurry (1/2 tsp cornstarch, 1 tbsp water)
1 boiled egg
150ml water
egg noodles (i used indo mie)
method:
-marinate chicken with ginger, 1 tsp light soy, 1 tsp dark soy, pinch salt n white pepper for at least 15 minutes
-in a claypot, or pot, add oil and fry garlic n ginger
-add marinated chicken pieces and fry until sides are brown
-add spring onion, water and rest of sauces, mix then bring to a boil
-add boiled egg (if want but it will continue to cook and become hard boiled) cover and simmer until chicken is done, around 12-15 minutes
-when cooked, add corn starch slurry to thicken sauce
-remove some sauce if too much, then add cooked noodles, blanched pak choi, the boiled egg cut in half

iced americano with sweet cream cold foam
wow it been a minnnn since i’ve posted a drinks reel, but jess’ homecafe is back open for a while yall.
so this is literally my fav drink for the summer 😌 basically a starbucks sweet cream cold brew? i’ve never tried that but that’s what i’m assuming.
it low-key tastes refreshing but also sweet, rich and creamyyy (without being too filling or heavy like lattes can get sometimes)
ingredients:
ice
1 shot of espresso ☺️
water
sweet cream cold foam:
2 tbsp double cream
1 tbsp milk
1 tsp - 1 tbsp sweetner (adjust to taste)
froth until thick but still runny
