I have recently written an opinion piece for @britishvogue sharing my story and expressing how strongly I feel against the tendency to equate all Russians to Putin. To be honest, I did have doubts afterwards, perhaps I was too honest, as already view points like mine have been criticised by the Putinists - people like myself who feel ashamed of the Russian government’s action do not deserve to be called Russians; and by the people supporting Ukraine - why are the Russians stealing attention away from the crisis in Ukraine by trying to pose as victims too. Of course, the latter is not my intention at all, and what is happening in Ukraine is of paramount importance to the whole world! And when I want to share my personal experience and that of my friends, I in no way want to draw the attention away from Ukraine. In fact, it’s quite the opposite. And the post on @britishvogue instagram grid itself got some really shitty comments, which, I will be honest, upset me a lot. But I guess that’s another thing I need to learn, the deeper I go into this work. Any tips on how to manage troll or other types of hurtful and insensitive comments would be highly welcome! And of course, I would love for you to read the article itself and let me know what you think. Link is in my stories now. 🇺🇦 •Paska o паска• Hoy nuestro corazón está roto, y queríamos hacer un homenaje al pueblo ucraniano con este pan típico de Pascua, esperamos que os guste.
INGREDIENTES:
• 550g harina panificable
• 230g leche
• 2 huevos
• 55g azúcar
• 10g sal
• 15g lev. fresca o 5g de lev. seca
• 55g mantequilla
• Ralladura de naranja
Decoración: huevo batido y almíbar simple
PROCEDIMIENTO:
1. Amasamos los ingredientes menos la ralladura y la mantequilla, que agregaremos a mitad del amasado. Seguimos hasta tener una masa lisa y con cuerpo
2. Cubrimos y dejamos fermentar hasta que doble su volumen
3. Dividimos y formamos con la forma que más nos guste
4. Lo vamos colocando en un molde engrasado. El nuestro es de unos 23cm de diámetro
5. Cubrimos y dejamos fermentar hasta que duplique su volumen
6. Pintamos con huevo batido y horneamos a 180ºC sin ventilador hasta que la temperatura interior llegue a unos 93ºC
7. Si no tienes termómetro, debería tardar unos 50 o 55 minutos. Si se dora muy rápido puedes taparlo con papel de aluminio. Es importante cocinarlo bien para que no quede crudo
8. Mientras se hornea, preparamos el almíbar poniendo en una olla 50g de agua y 50g de azúcar. Una vez que comience a hervir, retiramos
9. Al salir del horno, lo pintamos con el almíbar y dejamos enfriar

🇬🇧 •Paska• Today, our heart is broken, and we wanted to tribute Ukraine with this delicious typical bread recipe.
INGREDIENTS:
• 550g flour
• 230g milk
• 2 eggs
• 55g sugar
• 10g salt
• 15g fresh yeast or 5g dry yeast
• 55g butter
• Orange zest
Decoration: egg wash and simple syrup
INSTRUCTIONS:
1. Knead all the ingredients, except the zest and butter. Add them in the middle of the kneading process
2. Cover and let double in volume
3. Shape as you like
4. Place it on a greased pan
5. Cover and let double in volume
6. Brush with egg wash and bake at 180ºC for 50 to 55 minutes
7. While in the oven, make the syrup by cooking 50g sugar + 50g water until it comes to a boil
8. When the bread is baked, brush with syrup and let cool down

The world is a terrible place at the moment. I mean, it hasn’t been a great place for a long time, but the current situation forced upon Ukraine has really proven how low humanity can stoop. I’ve been lying awake at night trying to imagine what it would be like to live in a country under invasion and the truth is I just can’t. *I* am terrified; I can’t imagine how those who are directly impacted by it are feeling.
My heart hurts for how scared so many children and families are, but it’s also bursting with awe and admiration at the pride and bravery so many are fighting with to protect their loved ones and their country. This heroism and togetherness are a symbol of just how great humanity can be.
So much death. So much sadness. So much pain. So much fear. So much bravery! My - and my family’s - thoughts and prayers are with all those who are affected by the tragedies of this situation. #istandwithukraine

I probably should have left mine to rise for a little longer, but I had a very small window of opportunity: the children were nipping at my ankles, tugging on my socks, and hubby was leaving for work.

Fluffy Ukrainian Pancakes with Apples
7 oz whole milk plain yogurt (Greek yogurt works great)
1 large egg
1 1/2 tablespoons granulated sugar
3/4 teaspoon kosher salt
3/4 teaspoon baking soda
3/4 cup all-purpose flour
1-2 medium-large apple,и sliced 1/8 inch thick
oil for frying
ground cinnamon for serving
In a medium bowl, gently whisk the yogurt, egg, salt, sugar, and baking soda.
Continue whisking, gradually adding the flour. Mix until you get a smooth and thick batter. Cover the bowl with plastic wrap and let the batter rest for 15 minutes.
Preheat 1/4 cup of the oil on a large frying pan until the oil is hot and shimmering. Drop a small scoop (about three tablespoons) of the batter into the hot frying pan and top with the apple slice. Reduce the heat to medium-low. Repeat the same steps with the remaining batter, but don't overcrowd the pan.
Cook the blinis until the bottom is crispy and golden brown and the top is not runny anymore. It will take a couple of minutes. Then flip each blini on the other side and fry for 2 to 3 more minutes, or until the apple becomes soft and caramelized. Transfer to a platter lined with a paper towel to absorb the excess oil. Sprinkle with cinnamon. #ukrainianfood#standwithukraine
The kitchen is full of joy today! My mom came to visit and made her splendid pyrizhky for us. Half are with cabbage (for me), and half are with apples (for Alex). I’m actively prepping for the Orthodox Easter these daysand I’m thrilled that my yesterday's paska recipe testing was a smashing success. As a result of about 36 hr process, I got the lightest, fluffiest, and wonderfully buttery sweet Easter bread. Half of it is already gone😄 I’m super excited to put this recipe together and share it with everyone! Note: a stand mixer is a must for this kind of pastry. #budmo!
