Asparagus season idea: cheesy asparagus gratin. Make a basic béchamel sauce (there are hundreds of recipes online), mix in a tsp of Dijon mustard, a scrape of nutmeg and a handful of grated Gruyère cheese. Pour into an ovenproof dish. Toss the asparagus in oil and place into the dish. Dot with butter and top with a mix of grated Gruyère/Mozzarella, and breadcrumbs if it floats your boat. Bake on a medium heat for 15-20 minutes. Serve as a side with grilled meats or dunk chunky bread for a midweek treat on its own. Make it veggie by using animal rennet free cheese. . . . . . . . .

This week’s FridayFeast is Haggis, Neeps and Tatties* for 3, because it’s also poker night. And it happens to be the first such gathering since lockdown began about two centuries ago. We’re having ours with oatcakes and whisky gravy, but you should absolutely accompany it with whatever you like, because there really are no rules. *Haggis, turnip or swede and mashed potato. . . . . . . . .

[RECIPE]. Movie night (Scarface), with Haggis, Paprika and Mint Pakora. If you don’t mind your hands looking like they’ve been mixing concrete, they’re fairly fuss-free. Soften onions slightly in a pan for about 5 minutes and set aside to cool. Crumble 500g of good haggis into a large bowl (I used Macsween’s). Add about 100g of gram flour, 1tsp cumin, 1tsp turmeric and a tbsp of paprika. Throw in the cooled onions along with a handful of chopped mint and 2 tbsp of yoghurt. Mix well, then add a little water until the mixture is still firm but feels slippy in the hand. Deep fry in oil at 180° until deep bronze. Garnish with chopped chives and a few mint leaves. I served mine with a herby yoghurt on the side. . . . . . . . .
