Asparagus season idea: cheesy asparagus gratin. Make a basic béchamel sauce (there are hundreds of recipes online), mix in a tsp of Dijon mustard, a scrape of nutmeg and a handful of grated Gruyère cheese. Pour into an ovenproof dish. Toss the asparagus in oil and place into the dish. Dot with butter and top with a mix of grated Gruyère/Mozzarella, and breadcrumbs if it floats your boat. Bake on a medium heat for 15-20 minutes. Serve as a side with grilled meats or dunk chunky bread for a midweek treat on its own.
