[RECIPE]. Movie night (Scarface), with Haggis, Paprika and Mint Pakora. If you don’t mind your hands looking like they’ve been mixing concrete, they’re fairly fuss-free. Soften onions slightly in a pan for about 5 minutes and set aside to cool. Crumble 500g of good haggis into a large bowl (I used Macsween’s). Add about 100g of gram flour, 1tsp cumin, 1tsp turmeric and a tbsp of paprika. Throw in the cooled onions along with a handful of chopped mint and 2 tbsp of yoghurt. Mix well, then add a little water until the mixture is still firm but feels slippy in the hand. Deep fry in oil at 180° until deep bronze. Garnish with chopped chives and a few mint leaves.
