Last week I was lucky enough to travel to Seville to visit the beautiful Puerto de India's distillery. Built utilising an ancient Roman spring fed aqueduct, this beautiful spot makes a ridiculously tasty strawberry gin.

Starlino Black Olive & Strawberry Americano
This week on @SundayBrunchC4 Iβm making drinks you can seriously impress your BBQ guests with and the best thing is that you can batch it all ahead of time.
This is a surprising and delightful little combination, the saltiness of the black olive tempers the bitter Campari and allows more citrus and fruit to shine through. Itβs inspired by a lovely fresh salad I had in Greece.
The star of the show is Starlino vermouth with its beautifully nuanced rose wine, pink grapefruit and strawberry.
This entire cocktail can be pre batched ahead of time, the longer you leave it, the better it will be!
To a large tupperware or jar combine:
1/2 bottle of Campari
1 bottle of Starlino Rosa Vermouth
1 sliced strawberries
30ml kalamata olive brine
To serve, add 100ml of batch to a highball glass, top with chilled soda.
Garnish with a black olive and strawberry on a skewer

Watermelon & Whey Daiquiri
This week on @SundayBrunchC4 Iβm making drinks you can seriously impress your BBQ guests with and the best thing is that you can batch it all ahead of time.
The star of this show is the delicious Panamanian rum Ron Abuelo 12yo with notes of vanilla, tobacco and chocolate along with dried berries and stone fruit.
This Daiquiri is the best hack as it is diluted with watermelon juice and frozen en-masse for a freezer slushie without the need for a powerful blender or even ice.

Method:
Take 1 watermelon and juice it.

In a large mixing jug combine:
1 bottle of Rob Abuelo 12yo rumΒ
1400ml of watermelon juice
400ml fresh whey
500ml of freshly squeezed lime juice
400g of caster sugar
Single-ish serving specs:
35ml Ron Abuelo rum
70ml watermelon juice
20ml fresh whey
25ml fresh lime
20g caster sugar
Mix until all the sugar is dissolved and pour into heavy duty freezer bags ensuring that each bag is only two thirds full
Place in the freezer carefully and allow 6 hours to freeze.
Remove from the freezer and whilst in the bag gently smoosh up on a chopping board
Once a desired texture has been achieved, replace it in the freezer for when you need it.
To serve, remove from the freezer, give it a quick kneed and pipe into frozen cocktail glasses.
Finish with fresh mint, basil or coriander leaves and a slice of lime

Chase GB Escapes Spritz
Suns out, elderflowers are blooming, this little slice of summer won't last long so get out there and pick some elderflower!
This week on @sundaybrunchc4 Iβm making drinks you can seriously impress your BBQ guests with and the best thing is that you can batch it all ahead of time.
Today is all about foraged Elderdlower and @chase_distillery GB dry gin. We are making our Meadow Spritz.
On a hot and sunny day head out and pick 15 heads of fresh elderflower, ensuring you are away from any main roads.
To make serves for 20 people:
In a large tupperware in the fridge combine elderflower heads with 2 bottles of dry white wine, preferably a Torrotes but a floral Pinot Gris would work wonderfully, allow to infuse for 2 days in the fridge. After infusing, strain out the elderflower and add to your 2 bottles of Elderflower wine:
125ml white creme de cacao
250ml Chase GB Dry Gin (12.5ml per serve)
60ml fresh lemon juice
20 white grape sliced up
5 sprigs of fresh mint
To serve, add 100ml to a large wine glass with 50ml of chilled soda water. Garnish with fresh elderflower if its still around!
[1.7 units per serve]
For a single serve:
100ml elderflower wine
12ml creme de cacao
20ml chase GB dry gin
5ml fresh lemon juice
50ml soda water
Garnish with fresh grapes and elderflower or mint
If you cant get your hands on fresh elderflower, or you see this post a few weeks too late, you are in luck, as you can use @chase_distillery βs Elderflower Gin. This is the perfect drink to enjoy when the sun is shining out in the garden with all your pals marveling at your foraging skills!
