Watermelon & Whey Daiquiri
This week on @SundayBrunchC4 I’m making drinks you can seriously impress your BBQ guests with and the best thing is that you can batch it all ahead of time.
The star of this show is the delicious Panamanian rum Ron Abuelo 12yo with notes of vanilla, tobacco and chocolate along with dried berries and stone fruit.
This Daiquiri is the best hack as it is diluted with watermelon juice and frozen en-masse for a freezer slushie without the need for a powerful blender or even ice.

Method:
Take 1 watermelon and juice it.
In a large mixing jug combine:
1 bottle of Rob Abuelo 12yo rum
1400ml of watermelon juice
400ml fresh whey
500ml of freshly squeezed lime juice
400g of caster sugar
Single-ish serving specs:
35ml Ron Abuelo rum
70ml watermelon juice
20ml fresh whey
25ml fresh lime
20g caster sugar
Mix until all the sugar is dissolved and pour into heavy duty freezer bags ensuring that each bag is only two thirds full
Place in the freezer carefully and allow 6 hours to freeze.
Remove from the freezer and whilst in the bag gently smoosh up on a chopping board
Once a desired texture has been achieved, replace it in the freezer for when you need it.
To serve, remove from the freezer, give it a quick kneed and pipe into frozen cocktail glasses.
Finish with fresh mint, basil or coriander leaves and a slice of lime
