VIBIBI - aka Swahili vegan and gluten free pancakes made with coconut, rice and cardamom and drizzled with a coconut vanilla glaze known as Tuwi.
Nooo these aren’t named after my bibi. But probably once upon a time named after someone else’s. These are made a lot more on main land than the island I would say. But while making these I realised that we think smart and not hard because this same batter is used to make 4 different things and yet they all feel slightly distinct 😂
Please don’t ask me if you can use rice flour instead of actual rice. Because it’s NOT the same. Also before a swahili auntie pipes up, I had to use the metal ring because I don’t have a tiny frying pan, I make my batter thinner and would therefore run…. Also mine are on the fatter side but that’s how I like it! 💃🏽
I add less sugar mine so I have more room to drizzle the sauce and date syrup over. But you can always add more sugar. Key to these is to cook slowly with the lid on to stop them from drying out. I made a few and froze them so I can give them to bibi this weekend! Genius 😎

LIQUIDS TODAY KIDS! And also my mama’s Hibiscus & Rose Refresher! She’s been making this since she lived in Oman and fresh hibiscus was everywhere! Anytime of the year this is great. Right now over ice this is LIFE! #dinewithdina
Ingredients:
60g Dried Hibiscus
10g Dried Rose Petals
1 TBSP Rose Water
70g Caster Sugar (you can add more if you have a sweet tooth)
2 Litres of water
Method:
1. Add all the ingredients to a saucepan, place onto boil for 20mins.
2. Leave to cool, place in the fridge.
3. Pour over ice and DRINK, GLUG SLURP.
