Today’s starvation status required some savory pancakes.
These are super flavorful, filling, and of course low carb + keto. . Here’s how to make a couple of servings. Feel free to increase for more: .
1.In a large mixing bowl add your favorite low carb pancake mix. I used a mix from my friend and added in other ingredients based on the specifications on the back (mostly
1 egg, sour cream, and water) . 2.To the batter, add 2-3 tablespoons fresh scallion (or chives) and 1/3 cup shredded cheese of your choice. I used a sharp cheddar. Then let batter sit for a 5 minutes. .
3. Heat up a pan to medium, put in 1 tablespoon avocado or coconut oil (or spray oil), and pour in a heaping tablespoon (or two) of your batter. Turn the heat to low-medium and flip over once you see bubbles forming on the pancakes. .
4.Once plated, garnish up with some more fresh green onions or micro greens. I served with a sunny side up crispy egg, some sliced avo, and some cherry tomatoes. . .
