My procrastination somehow led me to make daifuku instead of mooncake. I guess they are similar enough right? A chewy skin with a filling? I may or may not follow up with an actual mooncake, we’ll see.
By the way FYI careful when you buy/make bean paste filling for your mooncakes, make sure they are dry enough! Otherwise they’ll end up as a sloppy mess and I had to resort to my spare chestnut filling. Still tasted great, but the filling visual contrast is lacking.
