Let me tell you, it is the easiest , like the easiest thing ever! In 15 years of being married, I have never consumed store bought shrikhand ever! Yeah it's that easy.Believe me! So after being yelled at by @giftyjoseph & @hairdustbysofie I shall now share the recipe with exact measurements, not my forte but I shall try.
HOMEMADE KESAR SHRIKHAND
Ingredients
1 katori hung curd ( you need to hand dahi in muslin cloth from a little height and allow all the whey to drip into a bowl right underneath.yes , overnight)
1 katori castor sugar
So remember the hung curd and the castor sugar must be in equal quantities - thumb rule
Chopped pistachios and almonds
4-5 Tbsps of saffron infused milk ( just dunk a few strands of kesar in warm milk the night before, so the aroma and the colour both get well infused in the milk)
Powdered elaichi ( I forgot to add this in the 5 am frenzy today)
Method
So basically use a hand blender
In a deep bowl take the hung curd and give it a blitz with the blender
Next add the sugar and the kesar milk little by little and keep blending until the sugar and the milk are all blended in your hung curd.
Add the chopped nuts and fold in
Refrigerate for a good 15 mins
Make Puris and DONE!!
