Make your Thanksgiving leftovers last with a new flavor profile! My Fried Rice with Thanksgiving Leftovers recipe below! Paired with @avaline red wine 🍷 Thanks @abcgma3 for having me!
RECIPE HERE:
Serves 2
Ingredients (can be substituted based on leftovers):
1 cup turkey either breast or dark meat, or both cubed or shredded
¼ cup roasted brussel sprouts chopped finely
¼ cup roasted carrots chopped finely
3 scallions (white and pale green parts sliced)
2 cloves minced garlic
1 cup Stuffing (standard box made with chopped onions, celery & butter)
2 cups cooked Short grain rice (should be at least one day old)
1 egg
1/4 cup dried cranberries, chopped
1 tablespoon soy sauce
3 tablespoons vegetable oil
Notes: could use corn casserole instead of stuffing. Peas would be a great addition too.
Instructions:
-Cut vegetables to the same uniform size, not quite a fine mince but a chopped mince.
-In a pan on medium-high heat, add vegetable oil, heat, then add 1 egg & scramble.
-Once egg blooms, add rice to and cook together. Once rice and egg is mixed, cook until rice is crispy.
-Remove rice mixture from pan & set aside.
-In heated pan, add soy sauce (no oil needed, butter already in stuffing), then fry stuffing, breaking it into small pieces until almost a crumble and crispy.
-Turn heat down heat, then add carrots, Brussel sprouts, and turkey.
-Mix in garlic, then add scallions (or chives).
-Add cranberries.
-Add rice back to pan and mix together.
