Fluke Crudo Salad with Passion Fruit Vinaigrette (recipe below). It’s bright, delicious and constantly evolving. The fluke gets sliced thin and tossed with fresh lime juice, kosher salt, fresh ground pepper and set aside while the veggies get sliced thin. Included here are radish, jalapeño, haikura turnip, avocado, cucumber and ice plant (a crispy edible succulent). Oysters are also magical with passion fruit. I add shallot to the dressing for a twist on mignonette. The first time I made this was on impulse when @cloudykitchen and @emcdowell came for a visit when we were all emerging from isolation last year. I had picked up some local fresh fluke and they arrived with a bag of oysters in hand. @rincontrolics had sent a box of passion fruit, which provided the mouthwatering inspiration. Note: when planning to work with raw fish, check with your fishmonger to ensure it’s “sushi grade” and be sure keep it cold. I like to set the serving plate atop a large dish of ice to ensure it remains nice and chilled while at the table.
Passion Fruit Vinaigrette
1/2 cup passion fruit pulp (some or all seeds removed to taste) or juice
1/4 cup extra virgin olive oil
3 Tbs rice vinegar
2 tsp honey
Squirt of lime
1/2-1 tsp Dijon mustard
Flaky sea salt
Fresh ground pepper.
(1 small shallot, minced (for mignonette))
If you’d like this spicy, a shake or two of Tabasco.
Whisk up all ingredients and enjoy as you like!
