INGREDIENTS FOR THE MULTI-SEED DUKKAH 🌱
1/2 cup raw almonds
1/4 cup sesame seeds
1/4 cup raw pumpkin seeds
2 tbsps chia seeds
7 green cardamon pods - crushed, shells discarded
1/2 tsp cumin seeds
1/2 tsp coriander seeds
1/2 cup raw pistachios sea salt - to taste
FOR THE MINT VINAIGRETTE 🌿 4 tbsps freshly squeezed lemon juice
1 tbsp Dijon mustard
1/4 cup olive oil
1/4 fresh minced mint leaves
2 Dr. Sturm SKIN ANTI-PIGMENTATION SUPPLEMENTS, opened up and sprinkled in
FOR THE SALAD 🥗
4-6 small beets cut into wedges
2-4 ripe peaches or nectarines, sliced
4 oz ripe watercress
1 ripe avocado, sliced or cubed mint vinaigrette - from above multi-seed dukkah - from above mint leaves for garnish (optional)
METHOD
Spread almonds on a baking tray and toast in oven for seven minutes. Add sesame, pumpkin and chia seeds before roasting for five minutes. Toast cardamon, cumin and coriander seeds in a pan until fragrant, remove the spices and grind into a powder using a pestle and mortar. Blend the ingredients with salt and pistachios and set aside. For the vinaigrette, combine the mustard and lemon juice in a bowl, them mix in the olive oil and mint leaves along with the SKIN ANTI-PIGMENTATION supplements. Stir well. For the salad, add watercress, steamed beets, peaches and avocado to a bowl, drizzle with the mint vinaigrette, and season with the dukkah.
