Don't lose your noodles!!
Soy 'Chicken Wing' and Spring Onion Noodles, recipe courtesy of Uyen Luu at The Guardian online, cooked by my amazing boyfriend Robin 🥰
A delicious combination of chilli flakes, ginger, soy sauce, lime zest, butter and Saville orange marmalade to coat 'chicken wings' or quorn fillets if you're vegetarian, baked with shallots and sliced limes for 30 mins at 180dc.
Cook 1 nest of egg noodles per person, according to instructions and toss in the cooked chicken marinade juices.
Wok fry sliced shallots in butter and oil until golden, add sliced scallions and garlic, sliced pokchoy and cook until wilted. Lastly add the noodles and fry for 3 mins.
Serve with freshly diced red 🌶 and scallion tops for decoration.
The marmalade gave a slight undertone of bitterness and a little heat from the chilli flakes which was delicious!
We would definitely recommend this recipe but add Chipotle flakes for extra heat and a few extra shallots. Overall it was very tasty and a welcome change to a traditional Sunday roast.
