Third-culture cooking refers to the in-between space where different cultures meet and, through cooking, create a new identity. Singapore is that in-between space and the exposure to its many different cultures and cuisines has helped shape my identity as a cook. So what better way to honor Singapore on its special day than a dish that gives you all the feels: creamy, savory and all-round awesome – Fried Fish Soup (with Cheese Soup Base). This fusion between the Cheese Crab Beehoon Soup and the typical fried fish soup brings out the best of both worlds. The soup base is made of fish stock, toasted dried fish crumps and of course cheese! Other ingredients include seaweed and taro (yam), which when cooked through will melt in your mouth.
