Disclaimer: This is not how much I eat in a day, but an example of meals you can have on 1600 calories, for those of you who asked 🙂 Breakfast - 453kcal/ 19g protein - 50g (2 oz) oats - 200ml (7 fl oz) unsweetened soy milk - 1 tsp pumpkin pie spice - 1 tbsp ground flax seed - 1/2 banana - 16g (1 tbsp) peanut butter - 3g (1 tsp) cacao nibs Lunch - 400kcal/ 26g protein - 50g (2 oz) whole wheat fusilli, dry - 100g (3 1/2 oz) firm tofu - 1 tbsp soy sauce - 1 tsp garlic powder - 1 tsp corn starch - 30g (1 oz) Vemondo Vegan Pesto alla Calabrese - 100g (3 1/2 oz) broccoli - 1 tbsp nutritional yeast Snack - 213kcal/ 9g protein - 200g (7 oz) unsweetened soy yogurt - 50g blueberries - 1 medium apple Dinner - 543kcal/ 20g protein - 200g (7 oz) chickpeas, cooked & drained - 30g (1 cup) salad leaves - 1/2 bell pepper - 1/2 tomato - 1 carrot - 15g (1 tbsp) vegan mayo - Lemon juice, to taste Total: 1610kcal 75g protein 47g fiber
