Fresh from the oven, sourdough cinnamon buns for a baker’s Sunday breakfast treat. Each batch has inched towards higher hydration, and also putting a portion of the raisins straight to the dough. Beautiful dough. Great dough activity and oven spring. Used my rye starter for the leaven. Total time from mixing the dough was 43 hours. Glaze made with butter, honey, milk & icing sugar ( thick-ish and applied with an offset spatula ).
