One protein, three vegetables.
Ground chicken
Zucchini
Broccoli
Mushrooms
Garlic
Olive oil
Soy sauce (low sodium 🤷🏻♀️)
Chili flakes
Salt
Put olive oil and minced garlic in a deep sauté pan.
I would par boil the broccoli because it took forever to get tender in the pan. When broccoli is close to tender add zucchini and then the mushrooms.
Add a little more olive oil if needed and a generous amount of soy sauce and salt to taste. If you like it spicy, add chili flakes.
In a different pan add a little olive oil and the ground chicken. Add a taco seasoning to taste. I also put a little soy sauce in the chicken and salt and pepper.
When ready, drain the vegetables and add the chicken.
